In early generations, Mr. Mime had four fingers in each hand. However, since having four fingers is usually associated with belonging to the Yakuza in Japan, many parents complained about it. Now, Mr. Mime has five fingers in each hand instead.

In the Japanese version of Super Mario Kart, Peach and Bowser's winning animations have them drinking from a bottle of champagne (with Peach being drunk). This was changed in all other releases, where Bowser holds the bottle and Peach throws it around.

Within the files of Super Mario World 2: Yoshi's Island, there are three unused sprites for Yoshi transformations. These include a plane, a mushroom and a tree. The plane was later swapped for the helicopter, but the purpose of the rest remains unknown.
My favourite thing about WarioWare Gold is how Wario will poorly draw any amiibo you scan on the Wario's amiibo Sketch mode...
...except when his own amiibo is scanned.
