Itahana says Lani's design is actually based on Pele (the Hawaiian goddess of volcanoes) because Minaba wanted to include a nod to Hawaii, where the game was developed. So Itahana designed her as a character who erupts when she gets angry, and her weapon is red because of lava.

Although they are not mentioned in the interview, I think we can surmise that Itahana also designed Beatrix, Doctor Tot, Terra's other genomes and Stiltzkin, among others. This is also based on the similarity in their artworks, so I could be wrong.

Among the NPCs designed by Itahana are Fratley, Lani, Mikoto and Alexandria's inhabitants, according to Famitsu's interview. He also worked on a number of other tasks, such as designing props (like Vivi's ticket), overseeing weapon designs and fixing background graphics.

As mentioned before, Vivi was designed by Hideo Minaba. The idea to feature a Black Mage came from Sakaguchi's “back to the roots” theme, as a symbol of the series' oldest entries.

Murase remembers Garnet's design was loosely based on Nausicaa, because he knew Sakaguchi was very fond of her. Besides, he had trouble striking the right balance between the size of her body and head.

For Zidane, Murase was requested to add spiky hair because it was the new trend for FF heroes. The blue costume was inspired by the French “Gitanes Bleues” cigarette packs. And guess what? Gitanes is spelled ジタン (jitan) in Japanese, the same as... Zidane's first name 🤯
