It seems each of them had eye changing ideas
Sailor Mars was supposed to have purple eyes that turned Red in transformation

But she's keeping purple in the anime

The eyes changing Color wasn't only for Minako either
Sailor Jupiter was supposed to get green eyes on transformation but auburn before transformation

However the anime depicts as Green eyes all the time
