The claim that Saber "doesn't understand war" in Zero is missing the point. The Saber from her lifetime/GoA, is a King who cut off her feelings.
The Saber in Zero and SN is more human because she is seeking out a wish to save herself. Shirou tells her something similar in Fate

the way the servant biographies are presented as if they were character sheets in like a tabletop RPG is just really cool (and shows how much the fight scenes are governed by a made-up, but well-established, set of rules...)
