Open areas would have been covered by other types of plants, yes. We actually have one site from the Late Cretaceous where a volcanic flow preserved a bunch of open areas in full detail. Here are some reconstructions of that site by Mary Parrish, and some of the fossils.

Ouranosaurus takes a dive. What would be a cool explanation on why the animals in Camp Cretaceous swim is that over competition on land from the larger herbivores in Jurassic World caused these dinosaurs to exploit the surrounding waters for vegetation.

Dino Fact!

Xixianykus (Xixian Claw) is an alvarezsaurid from Late Cretaceous China! It had very long legs relative to its body, at 20 cm long to 50 cm! It would've been an extra fast runner and given its size, it'd need this to escape predators!

In one case we got at least some idea how it might look like because one Cretaceous clade had hooks that are preserved in articulation in one specimen, but unfortunately that's only the pair of tentacles, what the arms looked like is uncertain.

The oldest marine turtle comes from the Early Cretaceous, Columbian Paja Formation. Desmatochelys padillai lived alongside other marine reptiles and grew to a hefty 2 meters across.
