Alrighty! Well when I first began my canon novel path I went with the 2017 Thrawn trilogy by Timothy Zahn. However being a trilogy that can overwhelm some new star wars readers. So I recommend Master and Apprentice by Claudia Grey. A fantastic stand alone novel.
