For this tree I started with breaking it down to simple shapes, with the cylinder trunk and the leaves as an oblong sphere, and deciding the shadows accordingly. Then once I know where my big shadows are, I can start treating the leaves as a bunch of smaller clumps

Break the forms down into simple shapes, don't worry about details. Work vague to specific. Really observe your reference.

Same with shading. Work big/blurry to small/refined. Pay attention to your light source.

More over painting. The thing here is not to obsess over detail, because the final processing tool is gonna do all kinds of weird shit to it anyway. So I rough out shapes, sort of clumsily delineate where dark and light is gonna be, but fast and sloppy is the watchword.
