HOLY CRAP I figured it out myself, now I can gimbal all engines in the same direction regardless of their own orientation.
And I didn't even need to ask the pros how they'd do it!

In the coming days SpaceX will launch their Starship SN8 to a height of 15km. The test flight will gather data to help improve the flight & landing capability of future Starship prototypes. Many firsts will be attempted on this mission in the first of many. Good luck team SpaceX.
