The last part of this is that this whole time I've been multiplying ambient occlusion over the diffuse as part of the bake process. Twist!
Tint the AO pink, and keep it light, to bake more of that faux back scattering SSS into the vertex colours.
Enjoy that juicy salmon.
Having more saturated darker tones and less saturated lighter tones helps sell that SSS look.
Part of the beauty of this is that it all gets baked to the vertex colours, so as long as you have a shader that supports that you won't need any textures once you've exported to engine.
