Bug- and Flying- types are usually just straight-up bugs and birds respectively. (With exceptions, of course.) Plenty of cultures eat bugs, and quite a few eat birds, so it's best to look at their secondary types re: edibility.
Steel-, Ground-, and Rock- types are often constructs made of metal, dirt, and stone respectively. (eg: Klinklang) However, there are some who *do* have flesh, and thus can be eaten once the inedible bits are removed.
For example, Qwilfish's poison is located in its spines. (It's also basically a fugu, so there may be a specific venom-producing gland.) If a trained, highly skilled chef successfully removes these parts, the flesh of a Qwilfish can be eaten safely.
First off, it may seem obvious that Poison-types are all highly toxic, but that's not *entirely* true. While there are many Poison-types composed entirely of toxic material (eg: Muk, Garbodor) there are a few whose typing comes from venomous glands, etc.
