At the conclusion of Yule, in the new year, folks shared a toast of Wassail. In England (and at my house) this form of mulled wine was also served in other places in various forms. Scots call it "hot pint" and it is used in a toast to prosperity.

The Wassail Bowl

Families assemble around a bowl of spiced ale, decorated with ribbons.
They toast each other with 'wass hael' = 'to your health', an ancient Saxon phrase.

Hence the bowl is called the Wassail or Wassel-bowl.

Wassailing the apple trees takes place in the West Country, where there is cider-making. Traditionally held on Old Twelfth Night, 17th Jan, it is the custom of drinking & singing to the health of the trees so they yield plenty in the autumn.
