I'm not sure what it would be called but my process for a lot of work like this is to work backwards - I try to draw as many of the "important" faces of the model first in pixel art, and then i build the model, as low poly as possible based on that! Pic related is the texture

I couldve made distorted tio look super sick if I wasn't limited by roblox's performance, like I woulda done more strings and holes and details. For example, on the left is low poly and right is high poly. maybe ill make a high poly version just for fun?
