I hope I can help. I'm new, but this helped me a lot. I start with the basic shapes, sometimes subdivide them once, and then I create a boolean between each of the shapes where they need to connect. I've tried modeling the way you show and it never turns out how I want.

tried using the tiling material height on some rock sculpts (turned them into inverted live booleans, it was stressful but fast), really trying to channel that feeling with them. The boolean method is quick but requires a lot of cleanup! Maybe not the best method
