Ok basically after getting a draft shape before, I've redone basically all the points to increase the density of information and definition of features.

Creating a Hillshading image (3d surface) from Points which have Height and Sea Depths. The Colours are a stretch from -500 to 300 which is why the 'river is green'

Starting to think the black areas may be an artifact of the Goode projection... hmm I may need to do my final build in a more 'normal' projection... I hope not.
I get the desired effect here (1) but lose it when there are too many points (2) and they peaks merge into a mountain.
Now that I have enough data to make a think I can also start to look at revisions and see why it's making certain things. The World Map describes an 'Arc of Fire' of volcanoes, which means a lot of Seamounts.
Yesterday I got a nice improvement to Blue Planets global DEM. I’m up to 4,300 height points that get interpolated into a continuous surface (which is how I get the blue wash from the dots).

Moar points = more data, I only have a few depth values outside of Pacifica Archipelago which is why you get this pattern but this looks like it's going to work really well for the the Globe.
